Chefs Appetizer


Ceviche of scallop with vichyssoise, oyster leaf and lemon gel.


Textures of artichoke; roasted artichoke, pureed artichoke, artichoke crisps,

truffle and garlic oil and charred leek.


Saddle of venison, onion ash, mushroom ketchup, Pommes Anna, juniper powder,

 chocolate and port reduction.


Peppered pear, pear crisp, blue cheese mousse, honey roasted hazelnuts.


Chocolate Forest Floor; Vanilla, white chocolate, dark chocolate, thyme powder,

 chocolate soil and walnut soil with beetroot sorbet.


Menu served with a selection of homemade bread and whipped butter.
